We'll make 3 dishes that are popular party foods - Enchiladas Salvadoreñas, which are not a rolled burrito but a tostada topped with meat, beans, and a tangy cabbage slaw called curtido and the Quesadilla Salvadoreña, a semi sweet bread, not a cheesy tortilla. The dishes will be paired with Atole de elote - a sweet corn comfort drink whose roots stretch back to the indigenous Nahua people.
